Banana Oatmeal Pancakes
1 1/4 cup rolled oats
1/2 cup whole wheat pastry flour
2 tsp baking powder
1/2 tsp salt
1 1/2 cups soy milk
2 ripe bananas
Blend all ingredients in high powered blender. Cook on one side until bubbles appear, then flip and cook a few more minutes. This makes about a dozen medium pancakes.
