Healthy Caesar Dressing
4 cloves garlic
2/3 cup unsweetened soy or almond milk
2/3 cup raw cashews
1 1/2 Tbs nutritional yeast
1 Tbs plus 1 tsp fresh lemon juice
2 tsp Dijon mustard
dash black pepper
Preheat the oven to 350 degrees. Roast the garlic for about 25 minutes, or until soft.
When cool, remove the skins and blend with the remaining ingredients until creamy and smooth.
Makes enough for a couple of large salads.
